The addition of Merlot and Cabernet Franc in the blend, along with nearly perfect growing conditions have given this wine excellent structure. Soft tannins serve as the backdrop for powerful flavors of dried cherry, raspberry and dark chocolate. Subtle flavors of vanilla bean and licorice help to enrich and lengthen the finish.
I would suggest a simple grilled filet with a fresh herbed steak sauce or a slightly more complex meat dish such as veal scaloppini with Gorgonzola sauce as a perfect accompaniment. -Rick Sayre, Winemaker
