Separate parcels were harvested at various maturity stages to produce a mix of interesting flavors. The early harvest captures the crisp zesty core of the wine whilst a slightly later harvest builds an element of tropical fruit flavors. The use of selected aromatic yeasts and cool fermentation temperatures have produced a vibrant and refreshing wine.
