Wine Spectator Top 100 of 2007!
Color: Golden yellow with bright greenish hue.
Nose: Rich, intense, fruity. Peach mousse, black figs, rose, vanilla cream. Overtones of hazelnut with a hint of orange blossom honey. The wood is delicate and hidden beneath the fruit fragrances.
Palate: Soft, strong, round. Its wonderful balance is held by a powerful streak of acidity, aided by richness of mineral salts and consistency of extracts.
Food pairings: Trenette al cartoccio (oven cooked pasta wrapped in an aluminium foil), Ravioli with rhombus fish and lemon sauce, hand made Tagliolini with truffle, boiled beef. After some years of bottle ageing, drink it with moldy or mature cheese.
Sicilian cookery: Fish soup, Cacio all'argentiera (fried caciocavallo cheese with vinegar and oregano), fish soup, pasta with ricotta cheese and black pepper, risotto with artichokes, sweetbreads in the skillet/on skewer.
