The 2008 Unfiltered Cabernet Sauvignon opens with notes of black fruits, cassis and black currants. The fruit forward aromas are pronounced in the youth of this wine which promises elegance as complex herbal layers of juniper and bramble characteristic of Spring Mountain follow on the nose. Vanilla and Chinese five spice flavors as well as similar notes mirrored from the nose are introduced on the huge, plush, powerful palate that has a lingering bittersweet chocolate finish.
Winemaker Chris Millard suggests pairing the complex layers of flavors in this Cabernet Sauvignon with a grilled New York steak. It is also a perfect accompaniment to roasted game meat like boar.

"The 2008 Cabernet Sauvignon reveals more creme de cassis and black currant characteristics along with good acidity, sweet tannin and a Bordeaux Right Bank aromatic and flavor profile. Soft, round and less structured than the vintages of 20 years ago, it should drink nicely for 10-15 years. "
