Exhibiting exceptional balance, this wine opens with aromas of chocolate covered coffee bean and a touch of cassis balanced by vanilla, pepper and mineral. The mouthfeel is sensuous, round and supple, with ripe tannins draped in velvet. Sumptuous to drink now, this wine will mature gracefully with time in the cellar.
Distinctive meat dishes with earthy or nutty flavor components are a perfect accompaniment to the luscious flavors in this wine. Try it with grilled lamb and a porcini sauce, beef tenderloin with winter vegetables and a red wine reduction sauce, or a New York steak with gorgonzola walnut butter. For cheese pairings, try Camembert, aged Jack or Parmesan cheese.

Put one of these away for a while. Tonight we enjoyed a 1996 that came from Wine.Com a few years ago. It aged well. After decanting for about 30 minutes it started with chalk, wood smoke, toasty oak, slight mint, earth, black cherry and leather. Dry finish and tastes still changing hours later. Complex and huge.
