This wine is a pale yellow color, with subtle green highlights. On the nose, there are aromas of asparagus mixed with some fruits such as pineapple, peaches and mangoes. Floral aromas can also be distinguished, of vanilla and soft minerals. The mouth is delicate and balanced, with no one taste dominating. Great acidity, coming naturally from San Antonio's cool climate, gives the wine a persistent, refreshing finish. This is a wine with ageing potential, since it will gain complexity in the bottle.
This Sauvignon Blanc is ideally served with oily fishes such as salmon or bluefish, cerviche, sea urchin, oysters and sharp cheese.
"Prior vintages of EQ Sauvignon have been ripe and unctuous. This one is different, marked by citrus aromas and flavors that power through the wine, along with the constant comings and goings of a mineral acidity that provide extra spark. For razor clam ceviche."
