This vintage comes from four parcels located in different soils which perfectly match during assembly: a "southern" pebbly soil brings fat and power, a Chaupin-like soil for freshness and acidity, a red clay pebbly soil (but very late picked because located to the north of the appellation) brings structure and body, and finally a sandy-limestone soil for smoothness. Harvesting took place between 23 of september and 5 of october. Grapes had an extraordinary concentration with mature skins which, as on Chaupin soil, have benefited from september optimal climate conditions.
The result is a very large crimson red wine with cramped but smooth tannins, a nice balance, as well as black fruits and liquorice flavor. A bottle which can be kept for very long time.

"The 2007 Chateauneuf du Pape Vieilles Vignes is one of the vintage’s most compelling wines. Most of the fruit for this offering comes from the estate vineyards in La Crau, and it is usually a blend of 80% Grenache (aged in tank and foudre) and the rest equal parts Syrah and Mourvedre that are kept in small barrels. Approxmiately 5,000-6,000 bottles are produced. It is hard to say whether this is the finest wine Christophe Sabon has made since taking over for his father, but what a profoundly great effort! It is an elixir of Chateauneuf du Pape with an inky/blue/purple color and an extraordinary nose of kirsch liqueur, black raspberries, licorice, truffles, graphite, and spice. The wine boasts enormous richness, incredible harmony, and a finish that lasts more than a minute. It is one of the most outrageously rich, concentrated, and perfect Chateauneuf du Papes I have ever tasted at this stage of development. It should last for 30+ years. 98-100

"Glass-staining purple. Powerful, room-filling aromas of blackberry, boysenberry, incense, olive and potpourri, plus a strong mineral quality. Deep, chewy and remarkably pure, with sweet black and blue fruit flavors and sexy violet and lavender pastille character. The finish seems to go on forever, leaving lush, creamy dark fruit notes behind. "You don't really drink this as much as you eat it," observed Isabelle Sabon. She said that the potential alcohol of the fruit jumped from 14% to 17% during the harvest. This is the polar opposite of the Chaupin. 95-98"
