Jasper Hill Georgia's Paddock Shiraz 2005

The 2005 Georgia's Paddock Shiraz is a deep magenta color with concentrated blackcurrant, mulberry and earthy spice aromas. Sweet and spicy fruit flavors explode on the palate and are balanced by chalky tannins and a crisp, natural acid finish. This wine will cellar beautifully for ten years or more.

International Wine Cellar - "Deep violet. Explosively perfumed scents of ripe blueberry, cassis, kirsch, cured tobacco and dried flowers. At once very ripe and lively, with potent red and dark berry flavors; verges on jammy but maintains energy and focus. Soft tannins add support to this massive shiraz, whose level of extract suggests that it will repay at least a decade of cellaring."
The Wine Advocate - "The 2005 Shiraz “Georgia’s Paddock” was aged in 20% new French and American oak. Yields for the wine were a meager 1.5 tons per acre. It exhibits an enticing perfume of smoke, pencil lead, mineral, blueberry, and blackberry. Made in an elegant style, the wine has lots of spice, rich flavors, plenty of depth, and a long finish."

Our aim is to make great wine, with the preservation of nature's flavours, complexities and balance in our wines by using minimal intervention in our vineyards and in the cellar - to allow the individual vineyard's "terroir" or sense of place to express itself.
Our wines are produced entirely on the estate using organic/biodynamic principles. We produce our own organic compost and have never used synthetic chemicals on either the vines or the soils, since our vineyards were planted in 1975.
Viticultural practices are as close to nature as we can get them: own rooted vines (ie. not grafted on to American rootstocks to confer Phylloxera resistance), no irrigation whatsoever, minimal tillage, natural inter-row mulching leading to broad bio-diversity, in turn giving depth and intensity to our wines. Only hand pruning of the vines and hand harvesting of the fruit can allow us the human connection to our living soil.
Minimal intervention is used during fermentation and maturation, allowing terroir or earth character of the individual paddock or plot to emerge in the wine. More importantly the grapes at harvest are flavour ripe, regardless of sugar ripeness. View all Jasper Hill Wines

From stickies to Pinot Noir, Victoria is varied in its wines. The southernmost state of Australia, Victoria is third in wine production, after South Australia and New South Wales. The state is home to Yarra Valley as well as other cool climate growing regions, and yet, it also houses the regions of Rutherglen & Glenrowan. These two areas are hot and dusty and famous for their sweet, fortified stickies.
Notable FactsLots of coastline gives Victoria a cool climate, appropriate for growing grapes like Chardonnay and Pinot Noir. Many new regions are discovering their growing potential – especially with these grapes. Inland is a bit warmer, and some of the best fortified wines are made here,as well as some good shiraz. Victoria also makes the most Sparking Shiraz.
About AustraliaLike the United States, which is about the same size, Australia's winemaking regions are huddled into one or two pockets of the country. The state of South Australia, which produces about 60% of the country's wine, also has the most wineries and sub-regions, including McLaren Vale, Clare Valley, Coonawarra and Barossa Valley. New South Wales is home to the Hunter Valley, while the smaller, southern state of Victoria is best known for theYarra Valley. Head way west to the very large state of Western Australia and you'll find the tiny region of Margaret River at the southern tip.

Alcohol By Volume GuideMost wine ranges from 10-16% alcohol by volume. Some varietals tend to have higher (for example Zinfandel and Cabernet Sauvignon) or lower alcohol levels (Pinot Noir and many white varietals), but there is always some variation from producer to producer. Some wine falls outside of this range, for instance Port weighs in closer to 20%, while Muscat and Riesling are usually a bit below 10%.
