Our Blanc de Noirs, made from predominately Pinot Noir, with a beautiful, pink-gold color which we boost by adding Pinot Noir still wine to the dosage. Rich and creamy, like strawberries and cream. Without doubt the most romantic of our Sparklings. Dangerously easy to drink. A favorite for many, Iron Horse is probably best known for this cuvée.Food pairing: Marries well with mushroom dishes such as a grilled Portobello sandwich or wild mushroom risotto, as well as Chinese chicken salad, poached salmon, chocolate dipped strawberries.

This is a fabulous, poignant little champagne that delights immmediately. Delicate but not too fragile in it's bubbles and it hits your taste buds in a gorgeous, easy wave of citrus and fresh cold peaches, soo yummy. Definitely dangerously easy to drink. I would drink this on it's own just for the fun of it, with a nice creamy cheese plate - nothing too intense- thai food, fish ; perfect with seabass or salmon - such a great foil for the rich but but light fleshed fish, salads or even pie! This is a really fun but flirtatiously sophisticated sparkler that would please the eonophile or the uninitiated. I love it!

Friends sent us a bottle of Iron Horse Wedding Cuvee to celebrate our engagement. When they say it is "dangerously easy to drink", they aren't kidding! It is fantastic! I am not a big fan of champagne, but this one changed my mind. This is what we now plan on serving at our wedding.
