Our Blanc de Noirs, made from predominately Pinot Noir, with a beautiful, pink-gold color which we boost by adding Pinot Noir still wine to the dosage. Rich and creamy, like strawberries and cream. Without doubt the most romantic of our Sparklings. Dangerously easy to drink. A favorite for many, Iron Horse is probably best known for this cuvée.Food pairing: Marries well with mushroom dishes such as a grilled Portobello sandwich or wild mushroom risotto, as well as Chinese chicken salad, poached salmon, chocolate dipped strawberries.

This is a truly lovely bubbley, the color of pink gold with small bubbles. I tasted it with pork, beef, and a cream based soup and it was delicious with all three. On its own there is a toast-with-sour-cherry-preserves flavor which is clean and refreshing.
The label claims that this is a blanc de noir with 80% pinot noir. Since the label also lists 20% chardonnay, definitely a 'blanc' not a 'noir', the claim for blanc de noir can be disputed. Fortunately, the description doesn't affect the quality of this lovely sparkler.
