    Winemaker Notes

Only free run juice from the old vine Gin Gin clone Chardonnay was used in the making of this wine, this component of the juice is the highest in quality with the most intense fruit expression and the lowest in undesirable phenolic skin characters. The clear juice was fermented in French oak barriques; 30% new with the balance being one, two and three years old. The wine was matured in the same barriques for a further 10 months. No lees stirring or malo lactic fermentation was allowed in order to preserve and highlight the purity of fruit expression. The objective was to make a wine that expressed the character of this superb vineyard in an elegant and restrained style of wine that would be bright, vibrant and fresh in its youth but benefit from medium term cellaring.

Visually, the wine displays fresh green tinges on a pale straw color. The nose exhibits aromas of fresh cut pear and honey dew melon with some zesty citric notes. There are no overt woody or buttery aromas with the primary fruit characters expressed with clarity and definition. On The palate is fresh and lively with clean crisp acidity complementing the vibrant fruity flavours. The palate has very good extension and ends clean and bright. This is a restrained style of Australian Chardonnay and highlights how far we have come with this style of wine over the last decade.

Michael Kerrigan, formally the Chief Winemaker of Howard Park and MadFish Wines for the previous 12 years and a small group of partners took over the Hay Shed Hill vineyard and brands just before Christmas 2006.

"I knew the Hay Shed Hill vineyard and its potential could not pass up an opportunity to be part of such an exciting winery that is producing Cabernet Sauvignon, Chardonnay, Sauvignon Blanc and Semillon wines as good as or better than any wine producer in Margaret River – and that means world class wine.

I believe that small, old, hands-on vineyards and wineries like Hay Shed Hill need to be owned and run by winemakers and grape growers; people who are attached to the land and the place and wish to express its character through the wine."

In a highly corporatized wine world we've seen highly visual wine companies 'huff & puff' with huge volume expectations with more press in the business news than favorable reviews in the wine columns. In the end corporations shouldn't run boutique wine businesses.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.

Home to some of Australia’s most elegant and long-lived red and white wines, Margaret River is situated in the farthest reaches of Western Australia. Relatively warm and dry, the region is cooled by breezes from the Indian Ocean. Margaret River takes some inspiration from Bordeaux, producing top-quality Cabernet Sauvignons and Bordeaux Blends with firm structure, mouthwatering acidity, balanced alcohol and notes of herbs and spice. For white wines, refreshing blends of Sauvignon Blanc and Semillon as well as complex, age-worthy Chardonnays are regional specialties.
