Grapes for this wine were 100% de-stemmed, but not crushed, to retain a substantial percentage of whole berries for fermentation. This process allows us to better retain the grapes varietal essence and minimize bitter tannin extraction in the wine. Fermenter temperatures were kept between 80-87oF, with cap circulation occurring regularly for gentle yet maximum extraction of flavor and body from the grape skins. A portion of the must underwent an eight day maceration for additional tannin integration.

Oce dry, only the free wine was transferred to small American and French oak barrels for just under two years of aging. This wine completed Malolactic Fermentation and, to enhance bouquet, flavor, and body was not fined and only minimally filtered prior to bottling.

50-50 Give-Back Plan
More than just a caretaker of the vines, Julio Gallo believed that his family had an obligation to protect the land by planting vineyards in a way that would preserve the local environment. His first step in accomplishing this task was to set aside as wildlife habitat one acre of property for every acre planted to vineyard in Sonoma County. Today, Julio's grandson, Matt, continues this 50-50 Give-Back Plan, managing a 6,000 acre property portfolio that balances 3,000 acres of planted vineyard with 3,000 acres of natural habitat.

While Sonoma County is acclaimed—and rightfully so—for its Chardonnays, Pinot Noirs, and Zinfandels, it also produces exceptional Cabernet Sauvignon. Of the region’s 18 American Viticultural Areas, only a handful produce top-notch Cabernet Sauvignon. These appellations include Alexander Valley, Knights Valley, Sonoma Valley and Dry Creek Valley. Sonoma Cabernet Sauvignons made in these appellations can offer a complex array of aromas and flavors. Fruit notes such as blackberry, blackcurrant, cassis, black cherry and raspberry often are accompanied by hints of graphite, dusty earth, cigar box, toast and vanilla. The varietal has a rich history in Sonoma, and some of these Cabernet Sauvignons and Cabernet-based blends rival the best from Napa Valley.
