winemaker's notes:
Aged in the bottle for approximately three years, the Cordon Negro Extra Dry is less austere than the Brut. Delicate and clean, it features a mellow, balanced flavor. Excellent as an aperitif.

This is a fragrent sparkling with hints of pear- I find that by itself, goes well with quiche& soft cheeses like Havarti and Brie. Combined with an organic un-sweetened orange juice-makes the best Mimosa I've ever had and sits well on any brunch table. I rate this one a 7.5, add on the great price and you bring it up to a 9.
