The Farallon Cabernet Sauvignon is full bodied with a rich, dark color. It has ripe varietal aromas of black olive and cassis (currants) and shows earthy-herbaceous notes. The tannins are full and balanced and the flavors of blackberry jam, olive spice, and ripe dusty fruit shine through. The oak aging adds flavors of vanilla, sandalwood and herbs to the nice Cabernet varietal flavors. This wine is complex and finishes with soft lingering tannins that will continue to soften and develop over the next two to eight years.
