Our 1999 Wild Ferment Chardonnay is a full-bodied, rich wine, reflecting the warmer vintage. A whisper of honeysuckle perfume floats around aromas of dried apricot, honey and vanilla. The natural fermentation characters add layers of fresh, yeasty bread. On the palate, the wine is beautifully balanced. Buttery apple and pear predominate, with a touch of creamy coconut and excellent natural acidity. With proper cellaring, the wine should improve in the bottle for the first year and continue to age beautifully for five years.
