Elyse Napa Cabernet Sauvignon 2000

Okay, so I'm a Westside-of-the-Valley-Cabernet-Guy, but sometimes you just have to try something new! Our 2000 Napa Valley Cabernet Sauvignon is deep dark in color with a rich texture and firm long tannins. Aromas of black fruits, violets and hints of olives give way to underlying flavors of leather, earth and tobacco.

The Napa Valley Cabernet Sauvignon is ripe with long lingering flavors that glide endlessly across the palate. To me this wine is Bordeaux-like in texture and aromas and will cellar well for the next 7-12 years. For immediate drinking, decant for an hour or so.

Pair with rich cheeses, meat and barbeque.
