Red wines, especially younger ones, need to be in contact with oxygen in order to develop their optimum bouquet. By pouring a wine into a big bellied decanter an hour or two before it is drunk, it allows maximum contact area between the wine and oxygen, allowing the wine to develop, or in essence, age.
