Donatella Cinelli Colombini's all-female wineries
dedicate this wine to one man: the enologist
Carlo Ferrini. He is the dragon that is portrayed
on the label, while the doves who surround him
are the seven women who work with him in
the winery. A very technicial vinification process
is performd starting with dry ice to lower the
temperature of the grapes when they arrive
at the winery. The destemming and crushing
processes are done simultaneously to enhance
the extraction of polyphenols.
This blend of
Sangiovese, Alicante, and Merlot is aged a year
and a half in small French 5hl barrels. Very dark ruby-red in color. A complex nose with fruity and herbaceous
notes. A powerful wine with good structure, very elegant tannins on the
palate with a typical Merlot rounded elegance and a not so typical Alicante
"spice", all making for a long intriguing finish. Serve with roasted meats
and aged cheeses.
Fruity with a not so small hint of spice, this is a great wine to pair with, well, obviously with Italian food (I had a polenta primavera tonight). I wouldn't hesitate to serve this with any wonderfully rich food, including cheeses, game, red meats, and chocolates (of course, I'll pair many, many things with a good, dark chocolate!) Italy goes up in my estimate be producing this wine. Grab a bottle or two...and enjoy!!
