Domecq Medium Dry Amontillado displays the classic nuttiness of this sherry style, achieved by eliminating the flor from matured Finos by boosting the alcoholic strength, then introducing the wine to an Amontillado solera for several more years of maturation. The wine, now exposed to air, gains body, a nutty aroma and flavor (like hazelnuts), and turns from pale straw to amber. Matured in its dry state, this style of Amontillado has been gently sweetened by the addition of a small amount of Pedro Ximénez wines prior to bottling. The perfect foil to chowders and bisques, it is also wonderful with salted nuts and mild, dry cheeses.
