Winemaker Notes

Very deep color gives a hint at the concentrated rich sweet cherry-like fruit in the nose. Big rich and mouthfilling, the flavors remind one of black cherry and currants. A wine with a good balance of oak, fruit and acidity in big yet elegant style. This Cabernet blend rounds out with 9% Cabernet Franc and 3% Merlot. It is a typical example of the types of flavors and quality of wine that can be expected from Dalla Valle year after year. A wine that will be around for quite a long time.

Professional Ratings

The 1991 Cabernet Sauvignon (88% Cabernet Sauvignon and the rest Cabernet Franc and Merlot) is an opaque, deeply saturated, purple-colored wine with a super sweet, pure nose of black-cherries, cassis, minerals, and vanilla. The wine possesses exceptional richness, full body, ripe tannin, and a blockbuster finish.

Rich, earthy, minty style, with a touch of leathery bitterness and tannins that grip and hang on tightly. Deeply colored and concentrated. A bold, assertive style that definitely needs time.

In 1983, Gustav and Naoko Dalla Valle began planting vines on the hillside of Oakville, overlooking Napa valley. Their vineyards produce excellent quality grapes, resulting in wines of great intensity, complexity and balance. Gustav passed away in 1995 and Naoko Dalla Valle continues the legacy of Dalla Valle wines. Dalla Valle Vineyards produces three wines: Maya (55% Cabernet Sauvignon and 45% Cabernet Franc), Napa Valley Cabernet Sauvignon and Pietre Rosse (100% Sangiovese).

One of the most prestigious wines of the world capable of great power and grace, Napa Valley Cabernet is a leading force in the world of fine, famous, collectible red wine. Today the Napa Valley and Cabernet Sauvignon are so intrinsically linked that it is difficult to discuss one without the other. But it wasn’t until the 1970s that this marriage came to light; sudden international recognition rained upon Napa with the victory of the Stag’s Leap Wine Cellars 1973 Cabernet Sauvignon in the 1976 Judgement of Paris.

Cabernet Sauvignon undoubtedly dominates Napa Valley today, covering half of the land under vine, commanding the highest prices per ton and earning the most critical acclaim. Cabernet Sauvignon’s structure, acidity, capacity to thrive in multiple environs and ability to express nuances of vintage make it perfect for Napa Valley where incredible soil and geographical diversity are found and the climate is perfect for grape growing. Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
