"Andrea Costanti established the Calbello vineyard down the hill from his family's vines at Colle al Matrichese in 1993. This '03 is remarkably cool and elegant and shows that even in challenging vintages, Constanti and Vittorio Fiore coax outstanding sangiovese from the site's mix of clay, marl and shale soils. The beauty of this wine is apparent in its evolution, shifting from perfectly ripe figs and cherries to a dark, savory minerality. Those flavors combine to form a haunting length that feels composed and fine. Cellar this for ten or more years and then match its earthy complexity with cassoulet."
