Dark ruby color, ripe black currants, violets and vanilla, spicy, oaky scents. The wine has great finesse and a particular softness imparted by the Merlot. It tends to be firm yet delicate and supple, great elegance develops with age.

Of the many glasses I've tasted this year, the 1997 Pauillac is one of the most memorable. We had been waiting for a table in the crowded Austin restauraunt, Zoot for almost an hour when my girlfriend disappeared to the bar. She returned with a marvelous bottle of Cha. Lafite Rothschild 1997 Pauillac, and two glasses.
At first the balanced velvet swells in the mouth, but its complexity is subtle and does not overwhelm with spice. The nose is smooth and silky, without a tannic tinge. The flavors of oak, maple, vanilla, blackberry, pepper, and corriander linger for a long time on the palette. This is a good sign that the 1997 is ready to be enjoyed now -- but it will increase its flavor for a couple more years in the bottle.
Save this bottle for the holidays or enjoy it with a beef tenderloin, venison, quail, boar, or other game. The complexity is a fine accomponyment with these foods.
