This cuvée expresses a light and fruity style. To
best create these qualities, we use the méthode charmat to vinify our wine. In this
method, the wine only goes through the alcoholic fermentation once, in a closed
vat, trapping the gas produced during the fermentation. The resulting bubbles
are smaller than in the méthode traditionnelle and the wine keeps more of its
bright, fruity aromas.
Fine, abundant bubbles define the Cuvée Jean-Louis Brut; its
bubbles are smaller than any of our other sparkling wines. The nose is bright and fruity, this wine exudes aromas typical of Chenin Blanc –
apples, apricots and a hint of honey. The cuvée ends with an explosion of fine bubbles followed by a smooth, fruity finish.
