To focus the vibrant flavors, we picked the fruit in the cool hours of the morning, when flavors were in perfect balance. We immediately crushed the grapes and placed them in stainless steel for a long fermentation at low temperatures. Eight months in European oak barrels knit together the bright fruit elements and imparted nuances of spice.
