Amarone (sometimes called recioto) is An Italian wine made in the only in the Veneto region of Italy. Using the passito method, the grapes are dried in a cool, airy room for up to 4 months until semi-dry, which produces concentrated sugars and flavors. Occasionally, the grapes develop botrytis which gives them added richness. During vinification, fermatation stops either naturally or because of human intervention, the wine's left with residual sugar and it's simply a recioto. If fermentation continues until the wine is completely dry, then the term amarone, which means "strongly bitter," is added to the name.
Campagnola's 2000 Amarone is a perfect example of this classic process. Lush on the palate, full of spicy flavors of wild cherries with hints of cocoa, anisette, and tobacco. These flavors are backed up by a richly textured, multi-layered, finish. Perfect with sharp cheese like Parmigiano Reggiano or by itself on a cold, snowy night.
