My lust for this wine knows no metes and bounds. This is our third effort at fizzy Freisa and by far our most successful. Freisa, for those late in joining us, is a fairly arcane Piemontese grape variety, known for its exceptional acidity, fierce tannins and strangely exotic fragrance of strawberry. It is made in a number of different styles in Piemonte, including dry table wine (generally fierce), dry fizzy wine (weird but said to be the perfect salami wine) and sweet fizzy (often sublime).
