Beringer Knights Valley Cabernet Sauvignon 2000
Cabernet Sauvignon
from Sonoma County, California
winemaker's notes:
Knights Valley Cabernet Sauvignon grapes get to the maturities we were looking for and the resulting wine shows the difference in more layers of aromas, full-mouthed fruit flavors and wonderfully supple tannins.

A decent wine that comes alive with spicy beef dishes. I had this wine with some Midnight Moroccan Chili, and was very impressed with its ability to hold it’s own against this rather spicy dish. Purple/red in color, it’s a deep but clear wine. The bouquet is clean and attractive, hinting at a super unfiltered finish. The taste is solid in each of my the three taste zones, first mouth, middle mouth, and finish. Its a dry, soft tannin, with refreshing acidity and medium body. The finish length is acceptable when sampled without food, and doesn’t loose any ground against heavy dishes. It’s well balanced, and gets a score of 14/20 on the Hines scale.
