Hidden Ridge 2007 55% Slope Cabernet Sauvignon was aged for 18 months in French oak, 85% new, then bottled unfined and unfiltered. A very deep ruby black color with aromatics of cedar, blackberry and spices. The flavors are richly textured with traces of black tea, mocha and anise and a creamy core of dark cherry fruit.

The wine is stainless-steel fermented for approximately 22 days, then transferred to 98% new French Allier and 2% American Oak barrels, where it undergoes malolactic fermentation. It is then aged for 14 months. The wine is lightly fined, and then bottled unfiltered.
