Whilst the style is essentially fruit-driven, Thomas Hyland Cabernet Sauvignon shows the classic varietal elements of ripe blackcurrant/cedar aromas and fine-grained tannins.

An elegant medium-bodied wine with upfront flavors of dark cherry and mulberry fruit. The fine tannin structure provides an even andfocussed mid palate, whilst the careful use of American and French oak adds richness, length and nutmeg, cinnamon and mocha flavours.

St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1460-litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.
