Winemaker Notes

Aroma of spiced cherries, heather, rose petals, and sandalwood. Flavors of black cherries, wild strawberries, cinnamon bark, and rosehip. The HMR Pinot Noir pairs well with wild salmon sauted in olive oil over micro arugula with sea salt and balsamic vinegar, or a smoked turkey sandwich with sundried tomato and fig-black olive vinaigrette.

    An inviting nose of buttery stewed cherries and red currants grows even more delicious thanks to smoked pork and a black-slate minerality. It's not quite so boisterous on the palate, but it features lovely cherry-pie notes, a slight orange-peel tang, some eucalyptus and a clean finish.

Adelaida Vineyards & Winery is located in Paso Robles and is the premier winery in the Adelaida District. Founded in 1981, Adelaida Vineyards is built on a vision of excellence and their goal is to produce the most distinct and compelling wines from their estate vineyards. The estate vineyards encompass 180 acres that span across distinct areas of mountainous terrain characterized by chalk-rock limestone soils, afternoon blasts of cool coastal air, and a daily 40 to 50 degree temperature swing. These unique and varied locations led to specifically designated grape varietals. By taking advantage of the unique soil, elevation, and microclimates on the property, Adelaida maximizes fruit quality. Through meticulous attention to detail in the vineyards, Adelaida is able to express the unique and diverse character of their soil and climate.

Say the words “Paso Robles Pinot Noir,” and some folks might give you a funny look. After all, the region has become famous for Zinfandel, Cabernet and Rhone varieties like Syrah and Grenache. But Pinot? It turns out, however, that Paso Pinot not only has some history, but a very promising future. As in the field of real estate, it all comes down to location, location, location.

Pinot Noir was made here as early as the 1970’s, with further efforts coming in the 1990’s. But it couldn’t happen just anywhere. Typically the sub-appellations on the Westside, namely Adelaida, Templeton Gap, York Mountain and Willow Creek, which benefit from the cooling effect of the nearby Pacific Ocean, turn out the most impressive Pinot Noir, redolent of red fruit, loamy forest floor and floral tones.
